FRIDAY'S RECIPES: FATHER'S DAY
Most dads love comfort food that is good and hearty.
Grilling is always nice if the weather cooperates, but
the menu below is great for the dad who loves a good
down-home meal. Diners are still all the rage and they
charge quite a bit for this same menu!
The Basic Meatloaf
Ingredients:
1 1/2 pounds ground chuck-or mixture of ground meats
1 slice bread--torn into tiny pieces
1 large egg
1 small sweet onion, minced
1 tsp. seasoning salt
1/2 tsp. black pepper
4 tablespoons ketchup or tomato sauce
1/2 cup milk
Combine all the ingredients in a large bowl with
your hands or a large wooden spoon. Place in
a loaf pan and smooth the top. Bake at 350
degrees for 1-1 1/2 hours until done. My mom
always cooked it without a topping, but you can
top with tomato sauce before baking or barbecue
sauce. My husband loves it with sauce and
cheese, but I tell him that's a little over the top as
far as the fat content.
Macaroni and Cheese
Ingredients:
1 pound elbow macaroni
1/2 cup butter or margarine
1 tsp. salt
1/2 tsp. pepper
1/2 cup flour
3 1/2 cups milk
1 pound Velveeta cheese *see note
bread crumbs
Preheat the oven to 350 degrees. In a sauce pan
melt the butter or margarine and add the flour, salt
and pepper so it makes a paste of sorts. With the
heat on very low, add the milk slowly. Turn up the
heat and slowly bring to a boil til it thickens some.
Add the cheese and cook until the cheese is melted.
Pour over the elbows which should be added to a
casserole dish. Mix and top with the bread crumbs.
Bake for about 30-45 minutes until bubbly. Notes:
This is my how my mom made it. My husband likes
it with 1/2 cheddar and 1/2 Velveeta. Some cooks
add minced onion as well. By the way, this is my
favorite comfort food! IF there are leftovers we add
taco meat to it and my husband takes it in his lunch.
Green Beans With Bacon Flavoring
Ingredients:
3 pounds fresh green beans, cleaned and trimmed
3-4 pieces of bacon, chopped
1 medium onion, sliced very thinly
pepper to taste
In a large pot sauté the bacon til cooked but not
crispy. Place the green beans in the pot and cover
with water. Stir the onions into the beans. Bring to
a boil. Lower the heat to simmer and cook for a
1/2 hour, watching the water level.
Butterscotch Chocolate Dessert
Ingredients:
1 angel food cake
4 cups milk
1 small package instant chocolate pudding
1 small package instant butterscotch pudding
5 candy bars-Heath toffee or Butterfingers
small tub frozen instant whipped topping
Prepare both puddings according to directions
with the milk. Cut the angel food cake into one
inch cubed pieces. In a 9x13 dish (or you can
use a very large bowl) place half of the cake cubes
spread evenly. Spread the chocolate pudding over
the cake. Crush four of the candy bars into a small
bowl. Set aside the last one. Top the pudding with
half the crushed candy bars. Place on a layer of
cake cubes (remaining cubes), spread with the
butterscotch pudding, and the remaining crushed
candy bars. Spread with whipped topping-you may
not need all of it. Crush the last candy bar and
sprinkle on top of the whipped topping.
