HERBS 'N SPICES: SUMMER TIDBITS
How do you know if your potted herbs have become
too large for the pot they are currently in? The roots
will start growing out the drainage holes of the pot,
and you'll notice that the pot dries out very quickly,
though it didn't used to. Both of these symptoms tell
you that the herb needs to be moved to a bigger pot
and placed in new soil.
BUTTERFLIES AND HUMMINGBIRDS
Which herbs attract hummingbirds and butterflies?
Here are a list of some of the herbs that can be placed
in an area for hummingbirds and butterflies. Remember
that if they are using it as a "food plant" they will actually
eat the plant, so don't count on these for your harvest.
They should be "extra" herbs for the wildlife!
Hummingbirds: sage, pineapple sage, lavender, bee balm,
comfrey and some mints.
Butterflies: sage, coneflower, thyme, hyssop, lavender,
oregano calendula, yarrow and borage. Plus they will use
fennel, parsley, dill, chervil, angelic, rue, lovage and hops
as food plants.
HERB BREAD FOR LUNCHEONS
This is a nice herb bread to try this summer. Serve with
pasta salad and fruit for a nice, light lunch.
Herb Bread
Ingredients:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 eggs, lightly beaten
1 cup nonfat plain yogurt
2 tablespoons Dijon style mustard
1/2 cup grated Parmesan cheese
1/4 cup minced fresh oregano or marjoram leaves
1/4 cup minced fresh chives
1/4 cup minced fresh thyme leaves
Preheat the oven to 400 degrees. Spray an 8 1/2x4 1/2-inch
loaf pan. In a food processor or blender, combine the flour,
baking powder, salt, eggs, yogurt and mustard. Blend well.
Add the cheese and herbs. Mix well. Pour the batter into a
prepared pan, place in the center of the oven and bake
until done-- about 45 minutes. Remove the pan from the
oven. Remove bread to cool on a rack.
