Judy Walker's Family Favorites

When I get together with my family or friends I like to bring 2 dishes. The first one is Marl's No Peek Chicken which my sister gave me more than 30 years ago and everyone seems to like it.

1/2 cup rice

1 small onion, diced

about 1-1/4 cup vegetables (carrots, potatoes, celery etc.)

can of mushrooms

4-6 pieces of chicken

1 can chicken broth

Layer, and bake 1 hour at 375 degrees. Can add dry bread crumbs on top. Enjoy!

Also, my Mom's Rice Pudding is the best and I take this along also for dessert.


In a saucepan combine 4 cups milk when it heats up add 1 cup rice (wash first) and cook 20-25 minutes or until done. Add a little salt. Cool for 2-3 minutes.

Then add 1/2 cup sugar and mix well. Add 2-3 egg yolks one at a time so they don't curdle and mix well and add 1 cup raisins and mix well. Beat egg whites until stiff and fold into rice mixture. Place in greased casserole dish and sprinkle cinnamon on top and also sprinkle with 1 teaspoon of sugar on top of cinnamon. Bake 350^ for 30 - 40 minutes. Enjoy.
