Thumbs up Cranberry Sauce

Since Christmas will be here before we know it, I wanted to post my favorite Cranberry Sauce recipe. My mother invented it many years ago, and since that time, we have NEVER used canned cranberry sauce again. I can guarantee that you'll love it!

CRANBERRY SAUCE

2 cups fresh cranberries
1 stick cinnamon
2 cups sugar
3 slices candied ginger, chopped fine
1-1/2 ounce brandy
1 cup orange juice
6 whole cloves (in cheesecloth bag for ease of removal)

In saucepan, bring sugar and orange juice to boil. Add cloves and cinnamon stick. Boil 5 minutes. Remove cloves, add ginger, cranberries. Cook until cranberries have popped. (Be careful...pot will foam and can boil over. Lower heat if necessary or remove pot from heat source for a moment.) After berries have popped, remove from heat, remove cinnamon stick. Stir in brandy. Serve warm or cold.

Note: letting cranberry sauce chill in the refrigerator overnight will help the sauce firm up a bit.

This is a great recipe! My son LOVES the
jellied stuff in the can. LOL I think I can switch
him over though this year.

Cranberry Recipe II

Hi- the following Cranberry Relish recipe gets used a lot at my house and just not Thanksgiving and Christmas. Really good with all types of meats.

Cranberry Relish

1 large can crushed pineapple with juice
1 small pkg. raspberry Jello (I use sugar free)

In a large skillet heat pineapple and juice to boiling. Remove from heat and add dry jello, stir to dissolve.

Add:

1 can whole cranberry sauce
1 can mandarin oranges, drained
1 red apple with peel, chopped
1 cup finely diced celery
1 cup red seedless grapes, halved if large

Mix all together and chill until time to use, will set up.

Susy, that recipe sounds fabulous!! I'll definitely make it for a special holiday. Last year, instead of making dressing in the 'bird', or on the side, I found a recipe for cranberry dressing bundles. They were great! You make them into little logs of dressing and then wrap a piece of bacon around them and put them in the oven. If anyone's interested, I'll post the recipe.

Hi---why don't you post it? With the holidays coming up we are all probably looking for new ideas although I usually stay pretty traditional. I love most all types of dressing but cornbread/sage is probably my favorite and I can never get it to taste as good as my mother's used to.

Thanksgiving is usually roaster oven turkey, mashed potatoes, gravy, corn, green beans, dressing, cranberry salad and wheat rolls. The rest of my family fills in the rest of the menu with desserts, salads , etc.

After eating way too much, we snack all afternoon and play games. I love the holidays!

How do you all celebrate?

BACON WRAPPED CRANBERRY DRESSING BUNDLES
1/4 cup margarine
2 onions, chopped
2 celery stalks, diced
1 apple, peeled & diced
1 TBSP thyme
1 TBSP sage
1 1/2 cups dried cranberries
1 TBSP lemon rind
1 sourdough loaf
1 lb. fresh sausages
1/3 cup parsley
1 egg, beaten
12 slices bacon
Cook onions, celery, apple, thyme and sage with margarine in skillet for about 20 min. (stirring often). Stir in cranberries, rind. Meanwhile chop bread into 10 cups oatmeal size crumbs. Transfer to large bowl. Remove casing from sausage, and work into crumbs with hands. Add onion mixture, parsley and egg, toss well. Form by 1/3 cupfuls into 24 ovals or logs. Set on baking sheet. Cut bacon in half and wrap each log. Bake 350 for about 30 min. until bacon is crisp.

For our Thanksgiving holiday, we don't do much of anything. I think it's a really huge holiday in the states, but not real big in canada, or at least not here in Newfoundland. Christmas is our big hoopla!!

Talking More cranberry recipes!

Since we are all on a cranberry theme I have
a couple too! LOL

Cranberry Ketchup
1 16 ounce can jellied cranberry sauce
3/4 cup granulated sugar
1/4 cup white vinegar
2 tsp. ground ginger
1/4 tsp. cinnamon
1/8 tsp. black pepper
1/8 tsp. ground allspice
1 tablespoon flour
2 tablespoons hot water

In a large saucepan, combine first 7 items
over medium heat. Bring to a boil. In a small
bowl, stir flour and water together to make a
paste. Add paste to cranberry mixture, stirring
until it thickens. Remove from heat. Cover
and chill 8 hours or overnight for flavors to
blend. Store in airtight container in refrigerator.
Serve with meat or cream cheese and crackers.
Makes about 2 1/2 cups.

Cranberry Butter

2 cups butter, softened
1 16 ounce can whole cranberry sauce
1 tablespoon grated dried orange peel

In a large bowl, mix all items together
using lowest speed of an electric mixer.
Spoon into molds or covered container.
Use butter on breads or English muffins.

All of these recipes sound absolutely delicious. I was hoping to find some new ones for the holidays and I think I just did. If any of you have a good fruit salad recipe please post it. Mine hasn't been turning out so well and I have been looking for a new one. Of course it might be the cook(me).lol thanks!

I had to look these over again. It's so funny
to think that I have all these great cranberry
recipes of my own and from you all but I will
STILL have to buy the jelly in the can for my
7 year old, since he LOVES it! LOL

With the holidays approaching these cranberry recipes are a good thing to bump up to the top to share once more. Brenda, that recipe for cranberry butter sounds sooooo good! I will be trying several of these in the upcoming weeks I think.
