    Chocolate Orange Banana Bread

    Hi! I have already posted my Brown Sugar Cinnamon Sour Cream Banana Bread recipe and I had a comment from a friend that she didn't like bananas...wanted to know if she could leave them out! LOL So I tried to make something where she wouldn't taste the bananas...and this is what I came up with. Made a few changes to the original recipe and got Chocolate Orange Banana Bread. I tried leaving out the bananas and bleh! Cough Cough! Too dry!

    Made two batches and three friends ran off with them! Please try and tell me what you think! Tastes like a moist (cuz of bananas) fluffy chocolate cake with a hint of orange to me! I would welcome comments!

    Chocolate Orange Banana Bread
    Preheat oven to 325 degrees (dark metal pan)

    3 cups flour
    1-1/2 cups white sugar
    3/4 tsp. salt
    1-1/2 tsp. baking powder
    1-1/2 tsp. baking soda
    3 Tbsp. vegetable oil
    3 eggs
    2 tsp. orange extract
    3/4 cup orange juice
    4 heaping Tbsp. sour cream
    6 or 7 oz. Baking chocolate, melted (I use bittersweet)
    3-4 very ripe bananas (2 cups banana puree)


    Combine dry ingredients. In another bowl, combine beaten eggs, oil, orange extract, orange juice and sour cream. Make a well in center of dry ingredients and mix in liquid ingredients. In small bowl, mash bananas with fork. Continue bananas with hand mixer until pureed and as smooth as possible. Add to batter; do not over-mix. Gently mix in melted chocolate and incorporate until evenly blended. NOTE: Start with six oz. And if you like darker flavor/color, add other oz.

    Pour into greased loaf pans. Bake 50-55 minutes, until pick comes out clean. Cool 10 minutes in pan, remove to cooling rack. Wrap in plastic when cool and serve the following day (don't eat it out of the oven...no good! I know somebody who did that...she didn't listen! LOL)

    TIP: When making mini loaves, half this recipe makes three minis (use 2 eggs). Bake 45 minutes (check at 40 min.)

    This is not overwhelmingly chocolatey...if you like, add more melted chocolate to taste! (yes, you can taste the batter!) You can't mess it up!


    I didn't add nuts because I didn't want to overpower the orange flavor.

    I would love to try this one but at the time I don't have any of the orange extract, or the baking Chocolate. Maybe my banana's will hold out until Saturday and I will run out to the store and pick up my missing ingredients. I will let you know if I get to try it.

    Karen, you can put the bananas in the freezer until you're ready to use them. You don't have to peel them, but I usually do so I don't get my hands all messy when I need them. I wrap them in plastic and ziplocs, then you can just microwave them when you need them, or leave them out for just a little while. They kinda get a little watery when you freeze them and defrost, so I just drain a bit before using.

    Anyway, try either recipe and let me know!

    I just throw the bananas in the freezer as is! I let them thaw out in a strainer before using them.

    I like this one too...but I'm on Slim Fast right now and can't eat any! sniff.....sob....
