    tea time sandwiches

    I am looking for some well," a little out of the ordinary" type of tea sandwiches. Does anyone have any? I love cucumber and there aren't a lot of those ones out there that I've been able to find. Thanks Colleen

    Breadbox Buffet Show

    I just watched "From Martha's Kitchen" on the FoodTV network. Martha Stewart featured a few tea sandwich recipes that I thought everyone would enjoy. She also showed how to make bread boxes out of loaves of bread. The next airing, at least where I am in MD, is tomorrow at 2 p.m. If anyone wants to watch it or set their timer to tape it, it may be worth it or you can try accessing the www.foodtv.com website and see if the recipes are posted.

    recipes, plus here are a couple:

    Cucumber Shrimp Tea Sandwiches

    Ingredients:
    1/3 cup minced green onions
    1/4 cup soft cream cheese, room temperature
    1/4 cup mayonnaise
    1/4 cup plain low-fat yogurt
    2 tsp. fresh minced dill
    1/4 tsp. garlic powder
    1/4 tsp. black pepper
    6 thinly sliced slices of homestyle white bread
    1 1/2 pounds medium shrimp, cooked and peeled
    1 cup thinly sliced cucumber
    1/2 cup thinly sliced radishes
    6 lettuce leaves

    Combine first 7 ingredients in a bowl. Cut rolls in half horizontally.
    Spread the cream cheese mixture on three slices of bread. On the
    other three slices add the shrimp, then arrange the cucumber and
    radishes evenly on top. Next add one lettuce leaf to each slice, then
    top with the slices that were covered with the cheese mixture. Press
    down lightly and cut into triangles with a serrated knife. If necessary
    you can place a decorative toothpick in each triangle. Notes: Use
    your favorite type of lettuce. You can also buy small salad shrimp
    and diced them up into the cheese mixture instead of using the
    bigger ones.

    Cucumber and Nasturtium Sandwiches

    Ingredients:
    2 medium sized cucumbers
    8 thin sliced brown bread
    4 nasturtium leaves
    mayonnaise
    onion juice or powder

    Peel, half, seed and finely chop the cucumbers.
    Place in a bowl and add a dash or two of the
    onion juice or powder and enough mayonnaise
    to make it spreadable. Butter the slices of bread,
    and for each sandwich spread on enough cucumber
    mixture to cover lightly. Lay a leaf on top of
    each piece of bread and top with another one.
    Trim the crust. Makes 4 sandwiches.
    Note-you could substitute any nice lettuce
    or watercress for the nasturtium. Also when
    you place these on a platter or each plate
    be sure to garnish with a nasturtium bloom!

    Egg Salad on Egg Bread
    3 Hard-cooked eggs, peeled, finely chopped.
    1/2 c. Best Foods Mayo naisse (don't use light)
    1 tbs. finely chopped green onion
    Salt and pepper to taste
    10 slices of egg bread

    Mix ingredients until well combined. Spread half of the bread with a thin coating of mayonnaise. Spread the other bread with the egg salad. Make each sandwich, cut off crusts, and cut into three parallel sections.

    Chicken Salad Sandwiches
    1 c. Chopped cooked chicken
    3/4 tsp. Salt
    1/3 c. Best Foods Mayonnaise
    1 tbs. Chopped green onion
    2 tbs. Toasted, chopped almonds
    1 tsp. Dill mix (opt.)

    Mix ingredients until well combined. Spread half of the bread with a thin coating of mayonnaise. Spread the other bread with the Chicken salad. Make each sandwich, cut off crusts, and cut into three parallel sections or four triangles.

    Baco-Dilly Sandwiches
    8 oz. Cream Cheese (softened)
    1/2 c. Mayonnaise
    5 Bacon slices (finely chopped)
    1 tbs. Chopped green onion
    1 tsp. Dill mix
    1/8 tsp. Pepper
    1 c. Toasted slivered almonds

    Mix ingredients until well combined. Spread half of the bread with a thin coating of mayonnaise. Spread the other bread with the cream cheese mixture Make each sandwich, cut off crusts, and cut into three parallel sections, or four triangles.


    Mandarin Orange Sandwiches
    Drain canned Mandarin oranges. With a fork, mix oranges into 6 oz. of cream cheese to make spreadable consistency. Mix in 1 tbs. brown sugar. Make sandwiches with white bread.


    Open-faced Fruit Sandwiches
    8 oz package cream -cheese, softened
    1/2 teaspoon lemon zest
    1/2 cup chopped nuts (toasted pecans or almonds)
    1 c Strawberries, well drained-and chopped into small -pieces
    Brown bread or whole wheat

    Combine the cream cheese and lemon rind. Blend in the nuts and berries. Spread the mixture on top of small pieces of bread, cut into rounds or squares, or on crackers.


    Celery and Walnut Sandwiches
    4 oz. cream cheese, softened
    1/2 cup celery, finely chopped
    1/2 cup diced toasted walnuts

    To toast walnuts, spread on a baking stone ( or sheet) and bake at 375 5-10 mintues until lightly browned. In a small bowl, beat cream cheese until smooth. Mix in celery and walnuts.


    Deviled Ham Sandwiches
    1 1/3 cups finely chopped ham
    1/4 cup finely chopped celery
    1/4 cup finely chopped onion
    1/4 cup mayonnaise
    3 tablespoons sweet pickle relish
    Salt and pepper

    Combine all ingredients and mix well.


    Other Sandwich Ideas:
    1. Jam and Cream Cheese
    2. Avocado and Bacon on Wheat
    3. Turkey, Cream Cheese and Cranberry Sauce
    4. Tuna Salad
    5. Peanut Butter, Banana mixed w/ 2 tbs. Cream Cheese & 2 tbs. Brown Sugar
    6. Apricot Jam, Cream Cheese and Chopped Ham whipped together
    7. Sliced Mozzarella, Tomato and Pesto Sauce
    8. Crab, Avocado, and Green Onion
    9. Egg Salad with four slices of Chopped Bacon
    10. Brie and thinly sliced Beef and Tomato

    Dill Mix

    Oops! Sorry...I forgot to change that. These are recipes I share through my business, The Pampered Chef. The company has several great seasoning mixes and the dill mix happens to be my favorite, so I use it quite often. You can just use plain dill weed, or if you find a dill mix in the spice section of your grocery store, you might try it.

    Cucumber idea

    My daughter and I went a little nuts last weekend. See what happens when we go to the farmers market. Teas sandwiches for days and days for just the two of us. Homemade lemon cake from scratch, her first ever.
    After a number of trys here is the best so far on the cucumber sandwiches.

    Heather's Cucumber Teawiches
    1 cucumber
    white wine vinager
    sugar
    cream cheese
    fresh dill
    butter
    sandwich slice bread

    Thinly slice a cucumber. In a small bowl, layer cucumber, with white wine or raspberry vinager, and a sprinkling of sugar. Continue till all the cucumbers are covered. Allow to stand at least 1 hour. Drain on a paper towel.
    Chop leaf part of the dill finly. Spread butter on both slices of bread. Thinly spread whipped or softened cream cheese on one side of bread. Lay 1 layer of cucumbers on cream cheese, sprinkle dill on top and place sandwich bread on. Cut in to squares after cutting of crusts. Lay 1 small piece of dill on top for decoration.

    All of you have excellent fillings for tea-wiches.

    Colleen, you may also go to www.allrecipes.com. Not only will you find things that satisfy every tooth in your head (sweet tooth included) you can put in the number of servings desired and the recipe will be instantly scaled from 2 to 2000. It's a very good resource.

    2 tea sandwiches

    Washington Sandwiches
    1cup candied cherries
    1/2 cup pecans
    1/4 cups orange juice

    chop cherries and pecans together, mix with orange juice. Spread between bread slices spread with sweet butter.


    Ginger Fig Sandwiches
    1 cup dried figs
    1/2 cups crystallized ginger
    rind and juice of 1/2 lemon

    In a food processor chop figs and ginger mix with lemon juice and rind. Spread between buttered slices of brown bread.

    I am off to the store

    The Washington sandwiches sound great. Not sure that my daughter will like them, I am sure I will.

    tea samiches

    All of those sandwiches sound great and I use some of them in my tea room. Here are a few that we find are popular.


    Egg & Salmon on whole wheat

    A two layer sandwich. egg salad on one layer and salmon on the other.


    Rolled Cherry Sandwiches
    mix cream cheese with marachino cherry juice and bits of cherry, spread on flat pressed white bread and roll like a cinnamon bun and then cut into 1 inch pcs.

    GREAT CUCUMBER SANDWICH RECIEPE

    MY MOM AUNT DAUGHTER AND I TAKE TURNS HAVE TEA PARTYS ALL YEAR LONG. OF COURSE WITH MY DAUGHTER ONLY BEING 4 I HELP ALOT. WE REALLY LOVE THIS RECEIPE FOR CUCUMBER SANDWICHES.

    1 MEDIUM CUCUMBER ( PEELED,GRATED AND WELL DRAINED)
    1 (3 OZ) PKG. CREAM CHEESE
    1/2 CUP MAYONNAISE

    THE NEXT STEP IS VERY VERY IMPROTANT. DRAIN CUCUMBERS BETWEEN PAPER TOWELS.( YOU MAY EVEN HAVE TO CHANGE PAPER TOWELS AT LEAST ONCE)

    MIX INGREDIENTS TOGETHER, THEN CHILL AT LEAST 30 MIN.

    THIS SHOULD BE SERVED ON WHITE BREAD(CRUSTS REMOVED, OF COURSE) BECAUSE WHEAT BREAD WILL TAKE AWAY FROM THE DELICATE FLAVOR OF THE CUCUMBER FILLING.

    I HOPE YOU LIKE THIS RECEIPE. WE LOVE IT AND MY LITTLE GIRL JUST LOVES TO HELP PUT IT ON THE BREAD TO MAKE SANDWICHES. PS. CUTTING SANDWICHES WITH COOKIE CUTTERS IS NOT JUST FOR KIDS. I LOVE TO USE MY FLOWER COOKIE CUTTER FOR MY TEA PARTIES!

    VEGGIE CHEESE SANDWICHES

    2c cream cheese,softened
    1/4c chopped onion
    1/4c grated carrot
    1/4c chopped green pepper
    2 tbsp fresh parsley
    1 1/2 tsp horseradish
    16 slices rye bread

    Stir vegetables and cream cheese until well mixed. Cover and chill
    for several hours for flavors to blend.Spread on one slice of bread
    top with another slice. cut off crusts. Then quarter.


    I usually make the cream cheese mixture the night before.

    I like to dice some black olives and mix them with Philadelphia cream cheese and spread it on white and brown bread to make sandwiches. It looks very pretty to spread it on the white bread and then close the sandwich with the brown bread so that you have one of each for each sandwich. It's a little different but very tasty.

    Cucumber sandwich recipe

    I thought that you all might be interested in this unique take on cucumber sandwiches. I tried it last weekend and it was a big success. Simple enough to make but very tasty.

    Cucumber Hummus Sandwich

    Ingredients:

    2 slices bread
    dijon mustard
    leaf lettuce
    1/2 cup hummus
    thinly sliced cucumber
    sliced tomato
    1 teaspoon balsamic vinegar
    1 teaspoon grated parmesan cheese
    Directions:

    Spread both slices of bread with dijon mustard. Place lettuce on one slice of bread. Spread the hummus on the lettuce. (This prevents the bread from getting soggy if you take the sandwich to work). Lay the cucumber slices on top of the hummus and the tomato slices on top of the cucumber. Drizzle the balsamic vinegar over the tomatoes. Sprinkle the parmesan cheese over all. Close the sandwich, cut in half, and enjoy.

    I altered this a bit by placing the sliced cucumber in a colander and sprinkling the balsamic vinegar over them and let them sit for a few minutes before adding them to the sandwich.

    These recipes souns delicious! I can't wait to try the Cucumber Hummus sandwiches. My teenage daughter is vegetarian and she doesn't really like hummus but I think she will like this combination! I always find something great when I look around in here...
