Do you have a crockpot? That would
be perfect for you guys. Let me know and
I'll post some recipes. But here is a casserole
that can be made the night before and stuck
in the oven by whomever is home to do it:

    Scalloped Potatoes, Sausage and Cabbage

    Ingredients:
    1/4 cup margarine
    1/4 cup flour
    1 tsp. salt
    1/2 tsp. black pepper
1 can evaporated milk (13 ounces)
    1/4 cup water
    4 medium potatoes, sliced thin
1 medium sweet onion, sliced thin
    2 cups shredded cabbage
    8 ounces kielbasa, sliced thinly

In a medium pan, melt the margarine, stir
in flour, salt and pepper, mixing till smooth.
Gradually add the milk and water while stirring
over medium heat. In a greased three quart
casserole layer 1/3 the potatoes, 1/2 the onion,
1/2 the cabbage, 1/2 kielbasa and 1/3 sauce.
Repeat. Top with the leftover potatoes and sauce.
Cover and bake for about an hour, until the potatoes
are tender. This dish can be assembled the night
before, covered and put in the refrigerator until the
next day. A great Monday meal!

Well, I have a page of beef recipes here:
    http://oldfashionedliving.com/beef.html

Also, boneless turkey breast is SOO easy.
You can put it in frozen, or thawed. I season
with salt, pepper, dried basil, oregano, and
sometimes garlic (throw in whole cloves and
just remove before serving). Cook it all
day on low, and remove it to a platter.
You can serve as is with baked potatoes
made in the microwave and a salad for
a fast meal. Lots of leftovers for hot turkey.
Save the broth and make a gravy for the
turkey and serve over Grand's biscuits.

    Here is another one:
    Slow Cooked Italian Beef

    Ingredients:
4-5 pounds pot roast of beef
    3 cups water
    1 teaspoon pepper
    2 minced garlic cloves
1 pkg. Zesty Good Seasons dressing mix
1/2 red onion, sliced very thinly

Pour ingredients over beef and cook on low all day
in a crockpot. Shred beef and return to broth for
15 minutes. Serve on buns or over noodles. You
can also add fresh herbs near the end if you wish-
    basil, marjoram or oregano.

I do a similiar one but without the dressing
mix, sweet onions and garlic. When the roast
is falling apart I break it up and then put it
on buns with sauteed onions and mushrooms
and provolone cheese melted on top. So
they are sort of like Philly Steak sandwiches.
