After we ran our feature on Those Crazy Cakes we received these wonderful recipes for more great cakes. I included two variations of the "Wacky Cake" since they are different in size. Thanks everyone, and keep on sending them!

Wacky Cake Recipes

Kay of Kay's Country Kitchen sent her Mom's recipe for Wacky Cake and told us "There are a few differences in the one on the site and the one my mom used. The one she used does not requires eggs, which makes it great for a budget, or if you dont have any, so I decided to send it to you anyway. It also takes less time to bake. Feel free to use it if you want. "

Wacky Cake

Sift Together:

3 cups of flour

2 cups of sugar

2/3 cups of Baking Cocoa (Hersheys)

2 tsp of Soda

1 tsp of Salt

Add:

2 tsp of Vanilla

2 TBSP of Vinegar

2 cups of Water

1 Cup of Oil or melted Shortening

Mix Well. Place in cake pan. Bake at 350 degrees for 20 - 25 minutes.

Here's our family version of Wacky Cake.... it is different than the one posted in that it only makes an 8X8 inch cake and contains NO egg.... this is good for people who have to restrict eggs due to allergy etc. Anyhow we've been making this since the early 50's.

Wacky Cake

1 1/2 c Unbleached All-Purpose Flour

1 tsp Vanilla

1 c Sugar

1 tsp Vinegar

3 tbl Cocoa

5 tbl Vegetable Oil

1 tsp Baking Soda

1 c Cold Water

1/2 tsp Salt

Mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour 1 c cold water over all and stir. No need to beat. Pour into 8 x 8-inch pan. Bake at 350 degrees F oven until it springs back.

Chocolate Kraut Cake

Here's a crazy cake that truly is very, very delicious.

1/2 cup well-drained sauerkraut

2/3 cup shortening

1 1/2 cups granulated sugar

3 eggs

1 tsp. vanilla

2 1/4 cups all purpose flour

1 cup water

1 tsp. each of baking powder and baking soda

1/4 tsp. salt

1/2 cup cocoa powder

Chop kraut very tiny, set aside. Cream shortening, sugar. Beat in eggs, one at a time.Beat well after each egg. Beat in vanilla. Mix dry ingredients together and add to creamed mixture alternately wih the water. Begin and end with flour mixture. Stir in chopped kraut. Add chopped nuts (optional). Bake in a sprayed 9x13 pan in a preheated 375 F. oven for 35 minutes or till a toothpick, inserted in middle, comes out clean. Enjoy..!!

Creamy Orange Delight

*Very simple cake! Light and delicious!

1 box French Vanilla Cake Mix

and ingredients to make cake

Fresh orange or lemon juice

2 fresh oranges (or lemons)

whipped topping

Mix cake mix according to directions, substituting the fresh juice, for amount of water called for. Zest 1 orange (or lemon) into the cake mix. Once mixed, bake cake and cool. Zest the other orange into the whipped topping with a tablespoon of the juice. Serve cake with a dollop of the flavored whipped topping and garnish with and orange twist and a sprig of mint.
