pieThis tasty pumpkin pie is different than what you've enjoyed in holidays past. You will definitely want to give this one a try!

One Store Bought Pie Crust, rolled out according to the directions and placed in a 9-inch pie pan

For the Topping:
6 Donsuemor Chocolate Madeleine Cookies
1/4 cup (packed) golden brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons chilled unsalted butter, cut into cubes

For the Pie:
1 15-ounce can pure pumpkin
1 cup sugar
1/2 cup (packed) golden brown sugar
3 large eggs
1/2 cup (1 stick) unsalted butter, melted
1 teaspoon vanilla extract

Place a double thickness layer of aluminum foil over the pie shell and cut a few vents in it.  Then press it into the shell snugly.  Bake at 425° F for eight minutes.  Lift out the foil and continue baking six minutes longer, or until the crust looks dry but not brown.  If it puffs up then just poke it with a fork.

In the food processor, fitted with the metal blade, grind the cookies, brown sugar, cinnamon and nutmeg together.  Remove the mixture and place in a bowl.  With your fingers, add the butter and cut it into the mixture until small pea sized balls form.

In a medium bowl, whisk the pumpkin, 1 cup sugar, and 1/2 cup brown sugar in medium bowl. Whisk in eggs 1 at a time. Whisk in melted butter and vanilla. Pour into prepared crust.

Sprinkle streusel over filling. Bake pie until streusel is golden and filling is set, about 45 minutes. Cool on wire cooling rack for at least one hour.  Serve with sweetened whipped cream.
