sweet potatoesSweet potatoes are actually the root, officially called a tuber, of a tropical plant unrelated to the potato. However, I can certainly understand the name of this popular vegetable, considering it describes it perfectly.

Many cooks only think of sweet potatoes during the holidays, but it’s a wonderful year round vegetable that can be used in numerous ways.

The basic and easiest method of preparing a sweet potato is to bake it, much like a baked potato. Scrub the sweet potato first, removing any bad spots. Bake in a 350 degree F. oven for 30 minutes or until the sweet potato is tender. Test by piercing with a fork.

I don't wrap the sweet potatoes, but I do place a piece of foil beneath them just in case they "leak". Once the potatoes are tender, remove from the oven, slit down the middle and add real butter before serving hot.

Sweet potatoes can also be cooked in the microwave for a quicker fix, which works well when preparing them to use in recipes. Wash the sweet potato, pierce several times with a fork and place in the microwave. Cook on high for 2 minutes, turn the sweet potato and cook 2 minutes more. Time will vary depending on the size of the potato.

Practical Recipes for the Housewife

Boil sweet potatoes, peel, mash, and put through a sieve. To two cups of the potato add a half cup of cream or rich milk, a full teaspoon of butter, a little lemon flavoring and one beaten egg. This recipe calls for a quarter cup of sugar but may use less. Now beat all the ingredients until they become light and creamy. Put in a buttered baking dish and bake until it is a golden brown on top.

Notes: Pone is traditionally a type of cornbread or spoon bread made of cornmeal, originally made by Native Americans. This is baked in the same way, but uses sweet potatoes.

Sweet Potato Croquettes

Boil, mash and season sweet potatoes with salt, butter and cream. Add the white of 1 or 2 eggs, according to the quantity of potato used, and cream the mixture. Make into pats, dip each into the beaten yolks of the eggs and roll them in sifted bread or cracker crumbs, and fry until brown in a wire basket.

Orange Sweet Potatoes

Ingredients:
6 medium sweet potatoes
4 slices bacon
1/2 cup water
3 tbsp. orange marmalade

Cook sweet potatoes until tender. Peel and cut into halves lengthwise. Brown bacon lightly. Add hot water to bacon and drippings and add potato halves. Cover skillet and heat slowly until potatoes are hot. Remove potatoes to a hot dish. Add marmalade to liquid in skillet, heat to boiling and pour over sweet potatoes. Serves 6.

Georgian Sweet Potatoes

Ingredients:
3 cups mashed sweet potatoes
2 tbsp. molasses
1 tbsp. butter

Place sweet potatoes in buttered casserole. Heat molasses and butter together slowly until butter is melted. Pour over sweet potatoes and bake in moderate oven (350 degrees F.) for 30 minutes or until lightly browned.
